Yes — no heat pasteurization and only coarse straining to remove wax. Live enzymes and pollen are intact.
Why is it crystallizing?
Raw honey crystallizes naturally. Warm the jar gently in warm (not hot) water to re-liquefy without destroying its properties.
What flowers did the bees visit?
It varies by harvest and season — that's the whole point of a single-producer honey. Flavor notes are listed when the producer distinguishes a specific varietal.
